Based in Halifax, Nova Scotia, Simon Thibault has been published in The Globe and Mail, Vice, The Coast, East Coast Living, and many more.  

He has produced content for CBC Radio in the Maritimes, as well as for national syndication. His series Assis Toi is now in its fourth season, and airs on the morning shows  throughout the Maritimes on CBC Radio One. He also produced a radio documentary for The Southern Foodways Alliance's podcast, Gravy. 

As well as writing, he is also a programmer at Devour! The Food Film Festival, held every year in Wolfville, Nova Scotia. He was also a judge for the 2015 James Beard Foundation Awards.

He is currently working on his first book for Nimbus Publishing.
