Simon Thibault is a journalist, food writer, editor, and radio producer based out of Halifax, Nova Scotia, Canada. His work has been featured on CBC Radio, The Globe and Mail, The Huffington Post, The Southern Foodways Alliance's podcast, Gravy. Vice, and more.
He is also the author of Pantry and Palate: Remembering and Rediscovering Acadian Food, published by Nimbus Publishing. Pantry and Palate and Simon were featured on everything from NPR, CBC Radio and Radio-Canada, Chatelaine, The National Post, and KCRW’s Good Food and many more.
As well as writing and radio production, he is also a programmer at the annual Terroir Symposium, He has also been a judge for the 2015 James Beard Foundation Awards, as well as the International Culinary Association of Professionals Cookbook Awards.
He currently works as a Developmental Editor at Nimbus Publishing, with a focus on developing titles that deal with culinary, Acadian, and LGBTQ+ themes.
